After an early breakfast at the hotel, the day’s culinary exploration begins with a guided visit to vegetable farms in the fertile Cumbum Valley, a region sustained by the waters of Periyar Lake. Guests gain insight into seasonal produce, cultivation methods, and the agricultural practices that support everyday Kerala cooking. Later in the morning, a guided walk through a local vegetable market offers an opportunity to observe how fresh produce is selected, handled, and purchased in daily household life. Guests are encouraged to engage with vendors and experience the market from a local perspective. We invite visitors to explore a nearby spice plantation where the owners demonstrate their commitment to sustainable agricultural practices. Their approach includes organic farming techniques and the innovative use of methane gas generated from cow dung to meet household energy requirements. This experience is particularly valuable for individuals interested in culinary traditions and flavour development. Participants gain a comprehensive understanding of how spices commonly used in global cuisine are cultivated, harvested, and processed before reaching retail markets. The visit also offers insight into the historical background, cultivation methods, medicinal properties, and economic importance of various spices.

In the afternoon, it is time to put theory into practice. Each participant works at an individual cooking station, where the chef guides you through an engaging and immersive culinary session. The knowledge gained from the previous day’s exploration of spices unfolds before you as you prepare your own dish. Gradually, the logic of spice combinations becomes clear, and culinary creativity takes shape through your hands.

In the evening, the chef joins you for dinner. At the table, participants reflect upon and discuss their newly acquired knowledge. Friendships deepen, conversations flourish, and lasting memories of shared smiles at Spice Village are created. An overnight stay at the hotel is included.

As the vessel glides through narrow canals and village landscapes, guests gain insight into the backwater lifestyle that has shaped the region’s culinary traditions. A freshly prepared lunch featuring regional specialties is served on board, highlighting ingredients and flavors native to the backwater communities. The cruise concludes in the Kumarakom area, where guests transfer to their hotel and check in upon arrival. The remainder of the day is at leisure, followed by an overnight stay at the hotel.

It concludes with an assortment of payasams, the region’s traditional sweet desserts. The afternoon is available for those who wish to experience an Ayurvedic massage. In the afternoon, guests explore the historic Arthungal Church on a  bicycle excursion. As evening approaches, the focus shifts to an interactive culinary session highlighting Kerala’s coastal seafood traditions. A  cooking demonstration introduces classic grilled seafood preparations, including regional fish and prawn curries, as well as fish wrapped in banana leaf and gently cooked with aromatic spices (Meen Pollichthathu). The experience provides insight into coastal cooking techniques and flavor profiles unique to the region. Dinner and overnight accommodation are at the hotel.

With an early packed breakfast from the hotel, guests transfer to the railway station to board a morning train bound for Thalassery, a coastal town renowned for its distinctive culinary heritage. Upon arrival , guests proceed to a heritage-style homestay for a warm welcome and a traditional home-prepared lunch shared with the host family. This stretch of the Malabar Coast is celebrated for its abundant seafood, brought in daily by local fishermen and sold fresh along the shoreline. Over generations, the region developed a unique cooking tradition shaped by maritime trade, local spices, and cultural influences distinct from other parts of the subcontinent. During the visit, guests are introduced to the principles and flavor profiles of North Kerala’s Muslim culinary tradition through informal discussion and kitchen interaction. Following lunch, the afternoon is devoted to exploring Thalassery and its surroundings. Highlights include a visit to a scenic drive-in beach, an introduction to local cottage industries such as traditional hand-rolling and handloom weaving, and time at a bustling fish market to observe coastal trade practices firsthand. Overnight accommodation is arranged at a local heritage homestay in Thalassery or at a nearby resort in the Kannur region, depending on group size.

Guests return to the hotel for breakfast, followed by check-out. Later in the morning, the culinary focus resumes with a visit to a local heritage homestay for an immersive cooking session dedicated to the Muslim culinary traditions of North Kerala. After the lunch we proceed to Mahe, French Colony within the British India (now comes under Pondicherry). Guests visit local landmarks, including a historic church and a neighbourhood school where French remains a medium of instruction, providing a unique cultural contrast. The day concludes with onward travel to Calicut, where overnight accommodation is arranged at the hotel.

Early in the morning, guests set out to observe a traditional martial arts - Kalari Payuttu, training session indigenous to Kerala, offering insight into a discipline that combines physical practice, philosophy, and cultural heritage. This experience provides context for the region’s historical traditions and way of life. Guests return to the resort for breakfast, followed by check-out. The journey continues to a historic coastal site known for its significance in early maritime exploration, where guests learn about the arrival of European navigator Vasco Di Gama”, who touched its shore in 1498 to the Malabar Coast. Later, a visit to a riverside boat-building yard introduces the craftsmanship behind traditional wooden vessels still produced using age-old techniques. En route to Calicut, guests stop at a small-scale cottage industry specializing in the preparation of locally made banana chips, gaining insight into traditional processing methods and the role of snacks in Kerala’s food culture. Lunch is arranged at a well-established city restaurant known for its regional cuisine. In the afternoon, guests transfer to the railway station to board in Intercity Express - train to Cochin. Upon arrival, meeting and assistance are provided, followed by transfer to the hotel. Overnight accommodation is arranged at the hotel.
